Tomatoes, smoked

Serves 4 persons

Ingredients:

Small plum or cherry tomatoes.

Olive oil

Fresh fine chopped thyme to your liking.

A tray of smoke dust No. 2 Lowland, No. 3 Valley or No. 10 Forest.

How to do:

Heat up a half-filled grill starter.

In the meantime toss the tomatoes in olive oil and sprinkle with fresh fine chopped thyme and coarse cooking salt.

Place them on a grill tray.

Place the coals in one side of the grill and a drip tray in the other side. Remove the foil from the smoke dust tray and place it directly on the coals.

Place the grill tray on the grid over the drip tray.

Put the lid on the grill. When it starts smoking, closed the damper by 2/3.

Smoke the tomatoes for approx. 20 minutes until they have collapsed a bit.

Served with e.g. beef, calf, or lamb meat.
