Steak:
Light grill starter with grill briquettes. Brush the steaks with olive oil mixed with fresh minced thyme. When the coals are ready and placed in both sides, place the smoke dust tray in one side directly on the coals. Place the steaks in the centre of the grid. Put on the lid. After a few minutes when it starts smoking, almost close the damper. Smoke the steaks for 5 - 10 minutes or until the core temperature is 55 degrees Celsius for red.
Italian salad:
Chop carrots and squash lengthways with a paring knife. toss in olive olie and lemon juice. Sprinkle with capers and thyme.
Cocktail tomatoes and onions:
Brush tomatoes and onions with olive oil and sprinkle with your favourite herbs and salt. Place in the centre of the grid with the steaks. These are to cook 5 – 10 minutes more than the meat.
Serve with good bread.
