Norway Lobster with Butter

Serves 4 persons

Ingredients:

  • 1 – 2 Norway lobsters per.
  • One smoke dust tray No. 9 Village Green
  • 1 package of butter.
  • Fresh fine chopped tarragon or your favourite herbs.
  • 1 glove fine chopped garlic.
  • Juice from ¼ lemon.
  • Olive oil.
  • Bread

How to do:

Butter:
Take out the butter from the fridge. When the butter is soft add the fine chopped herbs, garlic and lemon juice. 

The Norway lobster:
Split the Norway lobster lengthwise. Butter the meat. When the coals are ready and placed in both sides, place the smoke dust tray in one side direct on the coals. The Norway lobsters are placed in the centre of the grid. Put on the lid. After a few minutes when it starts smoking, almost close the damper. Smoke the lobsters for 10 minutes, then serve with good bread and lemon slices.
