North Sea common mussels, smoked

Serves 4 persons

Ingredients:

A tray of smoke dust No. 1/Tidal Flats, No./9 Village Green or No. 10 Forest.
1 kg fresh common mussels.

How to do:

Fill up a grill starter by 2/3 and light it.

Rinse the mussels under flowing water. The mussels that are open and do not close when tapping on them must be disposed of.

Place the mussels on a grill tray with holes in it.

Place the coals in one side of the grill and a drip tray in the other side.

Remove the foil from the smoke dust tray and palace it direct on the coals.

Place the grill tray on the grid over the drip tray.

Put the lid on the grill. When it starts smoking, close the damper by 2/3.

Smoke the mussels for approx. 20 - 30 minutes until they have opened.

The mussels which have not opened must be disposed of.


Serve the mussels as a first course. Serve them e.g. with a dill  or chili mayonnaise and good bread.
