Chicken Thighs

Serves 4 persons

Ingredients:

X number of chicken thighs

Olive oil

Salt and pepper

One tray of smoke dust No. 1 Tidal Flats, No. 3 Valley, No. 5 Meadow, No. 9 Village Green or No. 10 Forest.

How to do:

Light a filled up grill starter.

Brush the chicken thighs with olive oil.

Sprinkle with salt and pepper and spices to your liking.

Place the coals in each side of the grill. Remove the foil from the smoke dust tray and place it directly on the coals.

Place the chicken thighs on the grid over the drip tray.

Put the lid on the grill. When it starts smoking, close the damper by 2/3.

Smoke the thighs for approx. 20 – 25 minutes.
