Calf Culotte

Serves 4 persons

Ingredients:

1 Calf culotte of approx. 1 – 1½ kg

Olive oil

Salt and pepper

O
ne tray of smoke dust No. 2 Lowland or No. 5 Meadow.

How to do:

Light a filled up grill starter.

Trim the culotte for sinews. Score the fat surface. Brush with olive oil and season well with salt and pepper.

Place the coals in each side of the grill. Brown the calf culotte on all sides over direct heat.

Remove the foil from the smoke dust tray and place it in one side directly on top of the coals. To obtain extra smoke taste you can place a tray in each side.

Place the culotte in the centre of the grid with a drip tray under.

Put the lid on the grill. When it starts smoking, close the damper by 2/3.

When it stops smoking, remove the smoke dust tray.

The calf culotte grills 45 – 60 minutes depending of the size. Core temperature should be 60 degrees Celcius for red meat.
