Trim the tenderloin for fat and sinews.
Light a filled up grill starter.
Place the coals in each side of the grill.
Brown the tenderloin over direct heat on all sides until it gains colour.
Place the smoke dust tray in one side directly on top of the coals.
Place the tenderloin in the centre of the grid with a drip tray under.
Cover the grill with the lid. When it starts smoking, close the damper by 2/3.
Grill the tenderloin between 20 – 30 minutes
